Slowly pour in one bottle (about 12 oz) of stout beer, like Guinness, making sure to scrape the flavorful bits off the bottom of the pot. Add 2 cups of beef broth, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of dried thyme. Return the browned beef to the pot.

    Turn the dough out onto a floured surface and knead it briefly until smooth. Roll out the dough to fit a pie dish, reserving enough dough to cover the top of the pie.
