STEP 1
Begin by heating 2 tablespoons of olive oil in a large pot over medium-high heat. Season 1 kg of beef chuck cubes with salt and black pepper to taste. Sear the beef in batches to ensure it browns nicely on all sides, then remove it from the pot and set aside.
In the same pot, add the chopped onions and minced garlic, cooking until they become soft and translucent. Then, incorporate 250g of thickly sliced mushrooms, cooking until they have browned and released their moisture.
STEP 2
Stir in 2 tablespoons of tomato paste and 2 tablespoons of all-purpose flour, cooking for about a minute to remove the raw flour taste. This will help to thicken the pie filling. Slowly pour in one bottle (about 12 oz) of stout beer, like Guinness, making sure to scrape the flavorful bits off the bottom of the pot. Add 2 cups of beef broth, 1 tablespoon of Worcestershire sauce, and 1 teaspoon of dried thyme. Return the browned beef to the pot.
STEP 3
Bring the mixture to a simmer, then cover and let it cook slowly. This process allows the beef to become tender and the flavors to meld together. Once the beef is tender and the sauce has thickened, remove from heat and let it cool while you prepare the pastry.
STEP 4
In a large mixing bowl, combine 420g of all-purpose flour with 1 teaspoon of salt. Cut in 150g of shortening and 50g of butter (or margarine) until the mixture resembles coarse crumbs. In a small bowl, whisk together 1 medium egg, 65ml of water, and 1 teaspoon of apple cider vinegar. Gradually add this liquid mixture to the flour mixture, stirring until a dough forms.
STEP 5
Turn the dough out onto a floured surface and knead it briefly until smooth. Roll out the dough to fit a pie dish, reserving enough dough to cover the top of the pie.
STEP 6
Preheat your HYSapientia Air Fryer Oven to 360°F (180°C). Line the pie dish with the rolled-out pastry, then fill with the cooled beef and mushroom mixture. Cover with the remaining pastry, sealing the edges.
Make a few slits in the top pastry layer to allow steam to escape. Beat an egg and brush the top of the pie for a golden finish.
STEP 7
Bake in the preheated air fryer oven for about 35 minutes or until the pastry is golden brown and crisp. Let the pie rest for a few minutes before serving.
