STEP 1
Roll out the puff pastry on a floured surface until it’s about 1/8 inch thick. Cut the pastry into squares, approximately 4 1/2 by 4 inches. You should end up with around 8-10 squares.

In a mixing bowl, combine the cubed ham and grated cheddar cheese. Add a pinch of salt and pepper, then mix well to evenly distribute the ingredients.

Place a tablespoon of the ham and cheese mixture in the center of each pastry square, followed by a small spoonful of mushy peas. Fold the pastry over into a triangle or bring each corner to the center for a parcel shape. Press the edges to seal and use a fork to crimp them for a decorative look.

In a small bowl, beat the egg. Brush a light layer of egg wash over each parcel to help them bake with a golden, glossy finish.

Preheat the air fryer to 340°F (170°C). Place the parcels on the air fryer tray, making sure they don’t touch, and leave some space for air circulation. You may need to cook in batches if the tray is small.
STEP 6
Set the air fryer to 340°F (170°C) and cook for 20-25 minutes, or until the parcels are golden brown and puffed. Rotate halfway through cooking for even browning if needed.
STEP 7
Let the parcels cool for a few minutes before serving. Enjoy them warm, perhaps with a dipping sauce like mustard or more mushy peas on the side!
