Operating Steps
  • STEP 1
    To prepare the fries, start by washing and peeling the potatoes, then cut them into your desired thickness for fries. Soak the cut fries in a large bowl of cold water with 1 tsp of baking soda for at least 30 minutes to remove excess starch. After soaking, drain and rinse the fries, and pat them dry thoroughly with a clean kitchen towel or paper towels. In a large bowl, toss the fries with 1 tbsp of cornflour/cornstarch until evenly coated, then drizzle with 2 tbsp of vegetable oil, season with salt and pepper, and toss to coat evenly.
  • STEP 2
    Preheat your air fryer oven to 380°F (190°C). Arrange the fries in a single layer in the air fryer basket, cooking them in batches if necessary. Air fry the fries for approximately 28 minutes, shaking the basket halfway through the cooking time to ensure even cooking. The fries should be golden brown and crispy.
  • STEP 3
    While the fries are cooking, prepare the gravy. In a medium saucepan, melt 2 tbsp of unsalted butter over medium heat. Add 2 tbsp of all-purpose flour to the melted butter, stirring constantly to form a roux. Cook for 1-2 minutes until the roux is golden and bubbly, then gradually whisk in 2 cups of beef broth, ensuring there are no lumps. Add 1 tsp of Worcestershire sauce, a pinch of dried thyme, and salt and pepper to taste. Simmer the gravy for 5-7 minutes until thickened, stirring occasionally.
  • STEP 4
    Once the fries are done, transfer them to a serving plate. Pour the hot gravy over the fries, and sprinkle with shredded mozzarella and cheddar cheese.
