STEP 1
In the bowl of a stand mixer, combine the bread flour, all-purpose flour, salt, and sugar. In a separate small bowl, dissolve the active dry yeast in the warm water (110°F / 45°C) and let it sit for about 5 minutes until frothy. Add the yeast mixture and olive oil to the dry ingredients. Using the dough hook attachment, mix on low speed until a dough forms.
STEP 2
Increase the mixer speed to medium and knead the dough for about 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, add a little more flour, a tablespoon at a time. Conversely, if it’s too dry, add a bit more water. Once the dough is ready, shape it into a ball and place it in a lightly oiled bowl, turning to coat all sides. Cover with a damp cloth and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
STEP 3
After the dough has risen, punch it down to release the air. Transfer it to a floured surface and knead gently for a few minutes. Shape the dough into a loaf and place it in a greased loaf tin (9 x 4 x 3 inches). Cover the tin with a damp cloth and let it rise again for about 30-45 minutes, or until the dough has risen to the top of the tin.
STEP 4
Preheat your HYSapientia air fryer to 140°C (280°F). Place the loaf tin in the air fryer and bake for 25-35 minutes. Check the bread periodically to ensure it’s baking evenly. Once the crust begins to turn golden, remove the loaf tin from the air fryer.
STEP 5
Apply an egg or milk wash to the top of the loaf. This will give the bread a nice golden color and a slightly glossy finish. Return the loaf tin to the air fryer and cook for an additional 8 minutes.
STEP 6
Remove the loaf from the tin and place it directly on the air fryer tray. Increase the air fryer temperature to 170°C (340°F) and cook for another 5 minutes to ensure the crust is crispy and fully baked. Let the loaf cool on a wire rack before slicing and serving.
