STEP 1
Prepare the Ingredients:Grate the cheese and set it aside. If using a combination of cheddar and parmesan, grate both types and mix them together.
STEP 2
Mix the Liquids: In a medium-sized saucepan, combine 1 cup of milk and 1/4 cup of water. Place the saucepan over medium heat and bring the mixture to a gentle simmer.
STEP 3
Incorporate the Cheese: Gradually add the grated cheese to the simmering milk and water mixture. Stir continuously until the cheese is fully melted and the mixture is smooth.
STEP 4
Prepare the Thickener: In a small bowl, whisk together the 2 tablespoons of modified cornflour (or regular cornflour) with a small amount of water to create a smooth slurry. This will help prevent lumps from forming when you add it to the cheese mixture.
STEP 5
Thicken the Sauce: Slowly pour the cornflour slurry into the cheese mixture, stirring constantly. Continue to cook and stir until the mixture thickens to a creamy consistency.
STEP 6
Add Flavorings: Stir in 1 teaspoon of mustard, 1 teaspoon of onion powder, and a pinch of salt. Mix well to ensure all the ingredients are evenly distributed.
STEP 7
Incorporate the Eggs: Crack the 2 large eggs into a separate bowl and beat them lightly. Slowly add the beaten eggs to the cheese mixture, stirring continuously to prevent the eggs from scrambling. Cook the mixture for an additional 1-2 minutes until it thickens further and the eggs are fully incorporated.
STEP 8
Prepare the Toast: Preheat your air fryer to 190°C (380°F). Place slices of your preferred bread on a baking tray.Spoon the prepared cheese and egg mixture onto the slices of bread, spreading it evenly. Place the tray under the preheated grill for about 3 minutes, or until the topping is golden and bubbly.
