Preparing the Dough:
In a bowl, mix almond meal, egg, and erythritol (or powdered sugar) by hand until you achieve a homogeneous and compact dough. Cover the bowl with a cloth or transparent film and let it rest for about 45 minutes, refrigeration is not necessary.

Rolling and Cutting:
Cut two sheets of parchment paper and place the dough between them. Using a rolling pin, roll out the dough to your desired thickness. Use a star-shaped cutter or your preferred shape to cut out figures. Place the stars on a baking tray lined with parchment paper.

Decoration:
Once the stars have cooled, melt the chocolate in the microwave in 30-second intervals, adding a few extra ounces to temper it. Dip half of each star into the chocolate, allowing it to drain before flipping. Place them on a rack or parchment paper.
STEP 5
Walnut Garnish:
While the chocolate is still not completely dry, place a walnut on the chocolate-covered part of each star. Allow the chocolate to dry completely.
